Colorful Chicken on the Half Shell

I was in the mood to get fancy and colorful today and whipped up this new recipe - Colorful Chicken on the Half Shell!
You will need:
1/2 ripe avocado (skin from both halves) cubed
1/2 ripe mango cubed
3 slices roma tomato, cubed
1 4oz chicken breast, cubed
Lemon juice
Lime juice
Minced garlic
Cayenne red papper
Paprika
Onion powder
Black pepper
2 tbsp olive oil

Preheat oven to 400 degrees
Put cubed chicken in a pan. Drizzle olive oil over it. Add minced garlic (I use about 1/2 tbsp, but feel free to add more or less). Sprinkle cayenne red pepper over - I go in zigzags to cover as much as I can without blanketing the chicken).  Do the same for the paprika, black pepper, and onion powder. Use your hands (or a spatula) to mix the chicken, olive oil, garlic, and spices together (I find my hands work best). Put in preheated oven to cook for 15 minutes.

I usually wait until the chicken is in to make the "guac".  Cube the mango and avocado. Place in a bowl.  Cube tomato and add that.  Squeeze lemon and lime juice over.  (I like my food spicy so I add some more cayenne red pepper).  Mix it all together and set aside.

When chicken is done, place at bottom of avocado shells so the shells are about half full (you'll have some left over).  Top with mango "guac" (I add the leftover chicken to the leftover guac and save it for a snack later).  And voila! This is one serving, and it's a way to "dress" up a meal =D
