Well I've been a little lacking in my posts - sorry! I was packing and
then making a 14.5 hour drive to Connecticut from Georgia. But I
thought the best way to jump back in was with a healthy, tasty recipe
for you all. It's super quick and easy and super delicious.
Cajun Tilapia
You'll need:
fresh or thawed tilapia filet(s)
Lime juice
Lemon Juice
Cajun Seasoning (I like Perfect Pinch or Mrs Dash)
Set your oven to high broil and make sure you have a rack that is as high up as possible.
Line a cookie sheet with foil
Place filet(s) on sheet. Put enough lemon and lime juice so top is covered. Sprinkle entire top with cajun seasoning
Place in oven. Broil for 5-7 minutes (depending on size). Remove from oven. Flip filet(s). Cover with lemon and lime juice. Sprinkle entire top with cajun seasoning. Place in oven and broil for another 5-7 minutes. Take out and serve!
I like to serve mine with spicy lime black beans and quinoa made with spinach, tomato, onion, and bell peppers =D
