Just wanted to share one of my favorite recipes for stuffed acorn squash... makes 2 servings
You'll need:
1 acorn squash
1/2 cup navy beans
1/2 cup cooked quinoa
1/4 cup chopped onion
1/4 cup chopped bell peppers
1/4 cup chopped spinach
1/4 cup chopped tomato
1/4 cup chopped zucchini
cinnamon
cayenne red pepper
nutmeg
garlic
no-fat, no-cal cooking spray (I like olive oil cooking spray)
salt
pepper
Pre-heat oven to 350 degrees
Cut the acorn squash in half and scoop out seeds
Spray
inside with olive oil cooking spray or non-fat, no-cal fake butter
spray (you may also need to cut the bottom off one half so that it can
sit with the open end up without tilting)
Place inside-part down on a cookie sheet
Place in oven for 30 minutes.
While squash is baking, cook quinoa.
In
a small frying pan, add a small amount of water and bring to a boil.
Add spinach and fully cook (drain any extra water). Spray pan and
spinach with olive oil cooking spray and add onions and peppers. Cook
until soft. Add garlic, navy beans, tomatoes and zucchini. Cook a few
minutes, then add in quinoa. Sprinkle with cinnamon, nutmeg, salt,
pepper, and cayenne pepper (if you can't handle spicy, you can leave it
off). Cook on low so it all starts to stick together but don't let it
get too browned.
Remove squash from oven. Turn over so insides
are up. Scoop quinoa/veggie mix into each half, packing it in as much
as you can so it is easier to make a mound on top. Place back in oven
and cook for 30 more minutes. And voila! Super tasty, very autumn-y,
healthy meal =D
If you aren't overly conscious of health or just plain don't like quinoa, you can use couscous instead =D
